Me and my family where in the supermarket and we passed by the butcher and my dad saw this amazing veal shoulder and told me you should get this and roast it. I was like yeah why not. So I came up with a marinade and marinated it over night and roasted it the next day and it was amazing. You can apply this recipe to lamb and even chicken.
- Whole veal shoulder
- 4 cups of yogurt
- Spices: Ground cloves, pepper, dry coriander, paprika, garlic powder, onion powder, dry rosemary, Turmeric (all 1 tbs)
- 2 lemons
- 1/3 cup of white vinegar
- 1/2 cup of olive oil
- salt to taste
Mix all the spices and yogurt together. Then zest and juice the two lemons. Add the olive oil and vinegar and mix well. Grab the veal shoulder and score it all around. Then put it in a large container and add the marinade. Cover and marinade for at least 6 hours. I left it over night so the meat sucks up a lot of flavor.
Pre heat your oven to 180 c. Place the veal over a bed of seasoned veggies of your choice and cover and roast in the over for at least 4 hours. After the 4 hours remove the stock and cook for 20-30 minutes uncovered to give it a nice color. You can use the stock to make a great gravy to serve next to the veal.
This chicken recipe is amazing. It was my first time trying out this new technique that I learned that keeps the chicken moist and delicious. Its easy to make and works great.
- 2 whole chickens
- 5 potatoes
- 4 onions
- 1 lemon
- 1 garlic head
- 2 sprigs of rosemary
- 1 cup of water
- salt and pepper
- onion powder
- Dry coriander
- Olive oil
Dissolve 2 tbs of salt in one cup of water. Then using a hypodermic needle, inject the chicken breast with the salty water without puncturing the skin. This will keep the chicken moist. Then insert half a lemon and half a head of garlic and one sprig of rosemary inside the cavity of the chicken. Season with salt, pepper, onion powder, dry coriander, and paprika. And finally insert 2 cubes of butter under the chicken skin and spread as shown below. Tie the legs.
Place the chickens on a bed of sliced onions and potatoes seasoned with salt, pepper, onion powder, dry coriander, and paprika. Drizzle on them a good amount of olive oil and mix until everything is well coated with the seasoning. Place the chickens on top of the potatoes and put them uncovered in a pre-heated oven at 220 C for 1 hour and 30 minutes. After one hour baste the chickens with melted butter. After they are done cooking let the chicken rest for 15 minutes covered in foil.
Who doesn’t like burgers? That’s right, no one. Everyone likes burgers. They come in many different variations like beef, chicken, vegan….. You can make your burgers the way you like but today I will show you the way I do mine.
- 1 and a half pounds of lean ground beef
- Burger condiments (ketchup, tomato, lettuce…)
Season your ground beef with salt and pepper and mix well then form to patties. You can make your patties as thick as you like but the thicker the patty the smaller the amount of patties you get.
Grill your burgers in a cast iron skillet on high heat with a touch of oil in the pan. If you don’t have an iron skillet you can use whatever pan you have. Cook them depending on their thickness. My patty’s where not that thick so it only took 3-4 minutes on each side. If you want to add cheese to your burgers, while they are in the pan add the cheese on top and add a splash of water in the hot pan and cover. After 30 sec the cheese should melt beautifully on the patty.
Assemble your burger the way you like. I used balsamic caramelized onions and grilled mushrooms for my burgers but you can use whatever condiments you like. For a low carb burger, instead of putting the patty between buns, wrap the patty in lettuce.
Who doesn’t like spring rolls? Spring Rolls is an Asian dish that includes meats and vegetables or just vegetables rolled in a special wrapper that you can get from the supermarket labeled spring roll wrapper. Spring Rolls come in many different variations and stuffed in different meats and vegetables but today I will show you how I make them.
- 1 whole chicken boiled and shredded
- Spring roll wrappers
- 3 red onions diced
- 1 large head of cabbage shredded
- 3-4 carrots peeled and shredded
- 2 tbs of minced ginger
- 2/3 a cup of soy sauce
- 2 tbs of sesame oil
- 3 tbs of vegetable oil
For the sauce:
- 1/2 a cup of ketchup
- 1/8 cup of soy sauce
- 1 and 1/2 tbs of brown sugar
In a large pot, add the sesame and vegetable oil and cook the onions on high heat until the start to soften. The and the cabbage and carrots and cook for 10-15 minutes until they soften constantly mixing.
Then add the ginger and cook for a bit more. After that, add your shredded chicken and cook. Then add your soy sauce and mix well. Taste it and check if it needs more soy sauce. After that set aside the mixture to cool.
Before you roll the spring rolls in a small bowl, add 3-4 tbs of water and 1 tbs level of flour and mix until it turns into a sticky paste
To roll your spring rolls lay the spring roll wrapper as shown below and add one tbs of the mixture.

Then bring in the two ends
Now to make the end stick, add a touch of the sticky flour paste I mentioned earlier and roll the spring roll to the end.
To cook the spring rolls, deep fry them until they are golden brown.
For the sauce, mix all the ingredients in a sauce pan and cook on high heat and keep mixing so that the brown sugar melts. If the sauce is too thick, add a splash of water.
Foul Mudammas is a Middle Eastern dish mad with canned fava beans which is usually eaten for breakfast. I like making this dish because it is easy and delicious.
You will need:
- 1 can of fava beans
- half a tomato
- 1 hand full of coriander
- 1 lemon
- 1 clove of garlic
- 1 green chili (optional)
- olive oil
- salt to taste
Empty the can of fava beans in a small pot and simmer on low heat for a couple of minutes. Then, in a pestle and mortar mash on clove of garlic then add the heated fava beans.
Mash the fava beans until it turns into a bean dip consistency. Then and the juice of the lemon.
Then chop the tomato, coriander, and chili and add to the beans. Then season with salt to taste. Drizzle some olive oil on top and garnish with chopped coriander on top and serve with some warm flat or pita bread.
This recipe is very delicious and great for people who are on a no carbs diet. Easy and quick to make and will serve two.
- 250 grams of crab sticks
- 2 cucumbers peeled
- 2 avocados
- 1 tbs of chopped coriander
- 1 tbs of chopped dill
- 1 lime
- 2 tbs of mayonnaise
- 2 tbs of soy sauce
- 1 tsp of rice vinegar
- 1 tsp of sesame oil
- 1 tsp of chili powder
Cut the cucumbers and crab sticks into batons and add to a bowl. Then dice the avocados and add to the bowl. Then add in the juice of the lime. Then add the coriander, dill, soy sauce, sesame oil, vinegar, mayonnaise, and chili powder and mix well.
Potstickers are a Chinese dish which is basically pan fried wontons. Very easy to make and very delicious. It might take time but trust me its worth it. I made them using lamb mince but you can use chicken or even shrimp. Served with a spicy soy sauce which works great with this dish.
For the potstickers you will need:
- 1 kilo of mince lamb
- Wonton wrappers
- 2-3 spring onions
- 1 red chili
- 1 garlic clove
- 1 inch ginger
- 1/8 cup of soy sauce
- 3 tbs of rice vinegar
- 1 tbs of sesame oil
- 3 tbs of cooking oil
Chop the chili and spring onion and mince the garlic and ginger then add to the meat. Then add the soy sauce, vinegar, and sesame oil and mix well until it looks like
To wrap the potstickers place about 3/4 of a tablespoon of the mix in the middle of the wrapper and with your finger rub some water as shown below
Then fold in half
Then either close the edges with a wet fork or pinch the sides together as shown below
To cook the potstickers, in a wide pot add the cooking oil and heat. Then add the potstickers and cook on both sides until they are golden brown. After that add a splash of water in the pan when hot and cover and steam for 2-3 minutes. After that remove then and dry them on a piece of kitchen towel for a bit.
For the sauce you will need:
- 1/8 cup of soy sauce
- 2 tbs of rice vinegar
- 1/2 tbs of sesame oil
- 1 tbs of brown sugar
- 1 spring onion
- 1 red chili
Chop the chilies and spring onions and add to a bowl with the rest on the ingredients and mix well until the brown sugar dissolves.
